Orange Zarda Recipe
Ingredients for making orange yolk- To make orange yolk, you have to take 1 cup of rice. Finely chop some cashews, almonds, raisins and pistachios. For sweets, use ground sugar candy instead of sugar. For flavour, use green cardamom, bay leaves and for colour, use orange food colour. Zarda will taste different from Mawa, so take about half a cup of Mawa. Take 2 oranges.
First step- To make Zarda, wash and soak the rice. Now keep 2-3 cups of water in a pan for boiling. Add cardamom and bay leaves in water and boil. If you want, you can also remove these standing spices with the help of a strainer. Or you can leave it in this only. Now add rice to boiling water, add half spoon desi ghee and food colour. Boil the rice until lightly cooked and then drain the water. Zarda rice should not be too lumpy.
Second step-Now add 1 spoon ghee in the pan and fry all the dry fruits lightly. Raw coconut can also be chopped or grated and added to it. Now fry the coconut also and take it out. Now add 1 spoon more ghee in the pan or cooker. Add orange rice to it. Cook lightly for 2-3 minutes and then add sugar candy powder as per taste.
Third step- Mix everything well and add dry fruits on top. Now take out the orange juice in a vessel so that the seeds do not go inside. Now add orange juice to all the rice while spreading it with the help of a spoon. You can use more or less orange juice as per your choice. Pour mawa on top and leave everything for some time to set.
