Ingredients for making Malpua

For this you have to take about one and a half cup of flour, half cup of semolina, 2 cups of boiled but cooled milk, 1 cup of sugar, 1 teaspoon of fennel, some finely chopped dry fruits and cardamom powder. Use oil or desi ghee to fry Malpua.

Semolina Malpua Recipe

First step- Prepare the batter to make Malpua. Take a big bowl and mix milk and sugar in it. If you want, add sugar to hot milk and boil it for 5 minutes and then let it cool. With this the sugar will get mixed into the milk quickly. When the milk cools down, add semolina to it. Now add flour little by little. While adding flour, take care that there are no lumps. You keep stirring with a spoon or beater. Mix all the flour and beat the batter. The batter should not be too thick or thin. Now add dry fruits, cardamom and fennel to the Malpua solution and mix well. Now keep the batter for 1 hour. Due to which the batter will become slightly thick.

Second step- Now to fry the pua, place a flat pan on the gas and let the oil heat up. When the oil is hot, pour 1 tablespoon of batter in the center of the pan. Keep the gas flame low and let the pua sink from one side. Due to its sweetness, pua sometimes sticks to the pan. Remove it gently and then turn it over. Bake the pua on both sides until it turns golden brown. Keep the gas on low or medium flame. When the pua gets cooked from both the sides, take it out on some paper. Prepare all the puas in the same manner. Keep in mind that if the Pua sticks to the pan or pan, remove it by stirring it lightly from the side.

Very sweet, crispy and flavourful pua is ready. You can make these to eat on Holi. The guests coming to your house will leave all the dishes and eat only the pua prepared by you. You can eat them as is or with curd and rabri.
