Spinach must be included in the diet in winter. Green vegetables are available in abundance these days. At present, Bathua and Fenugreek are better when they grow a little more in winter, but Spinach is being sold in abundance in the market. Iron and Vitamin B6 are found in good quantities in spinach. Palak Paratha Recipe
First step- To make spinach paratha, you have to take about 250 grams of spinach. With this amount of spinach, 8-10 parathas can be easily prepared. Now remove the spinach root and wash it thoroughly with water 3-4 times. Keep in mind that there should not be any soil in spinach at all. Now keep the spinach in a cooker or any pan to boil. Spinach has to be boiled without water. Spinach will melt in just one whistle of the cooker.
Second step- Now let the spinach cool down and drain out the water that comes into it in a vessel. Put the spinach in a plate or bowl and mash it with the help of a bowl or glass. Crushing the spinach will give better taste to the paratha. Now add wheat flour as per spinach and mix the spinach. Use spinach water if needed. Add 1 finely chopped green chilli, salt and cumin to the flour. Add 1 teaspoon ginger and garlic paste to it and knead a soft dough.
Third step-Now heat the pan, take dough from spinach flour, roll out triangular layered parathas and bake. Bake the paratha on medium flame till it becomes crisp and then eat it with tomato, coriander and green chilli chutney.
Fourth step- To make coriander chutney, add green coriander, green chilli, 2 tomatoes, cumin, garlic and salt and mix. If there is cob in the house then it would be better to make cob chutney and eat it. If you are grinding chutney in a mixer then grind it only slightly coarsely. This chutney will further enhance the taste of paratha.
