How to make Rasgullas without sugar
When people hear the name of Rasgulla, the thought of Bengal comes to their mind. And why not Bengali Rasgulla is something else altogether. The craze for Rasgulla here is not only in India but also in foreign countries. People also come from abroad to taste the Rasgulla of Bengal. In Bengal, during the winter season, a special type of Rasgullas is available which is prepared without sugar. This Rasgulla is prepared with jaggery during cold season. In such a situation, here we have brought an easy recipe of Rasgulla without sugar. By quickly noting down the recipe, you can make jaggery rasgullas in minutes.
Material
- Paneer (cheese) – 250 grams (use very fresh cheese)
- Jaggery – 150-200 grams (grated)
- Flour – 1-2 tbsp (helps to mix the jaggery)
- Vanilla essence (optional) – ½ tsp
- Water – 1 cup (for jaggery syrup)
- Ghee – 1 tablespoon (for frying the rasgullas)
Method of preparation

First of all, crush the fresh paneer well, so that no lumps remain in it. While mashing the cheese, keep in mind that it should be soft and smooth.

Pour 1 cup water in a pan and add grated jaggery to it and heat it on medium flame. Boil it until the jaggery dissolves completely. Try putting one drop of syrup in a small plate. If the syrup forms strings then your syrup is ready.
Preparation of Rasgullas Dough
Add flour and vanilla essence to the mashed paneer and knead well. Keep in mind that the dough should not be too hard or too soft.

Now make small balls from this mixture. Make balls and carefully drop them into the syrup.
Fry
Heat ghee in the pan and slowly add the rasgullas into it. Fry them on low flame. Keep the rasgullas cylindrical so that they cook evenly.

Now jaggery rasgullas are ready. You can serve them hot or cold.
