So let us know here how to make Gulab Jamun from carrots.

Material

Carrots (boiled and grated) – 2 cups

Khoya/Mawa-1 cup

Flour 2-3 tbsp

Sugar (for syrup) 1 cup

Water (for syrup) 1 cup

Cardamom powder ½ tsp

ghee/oil

pistachios/almonds

Method of preparation

prepare syrup

Put sugar and water in a pan and heat it on gas. Cook until the sugar dissolves and the mixture comes to a boil. Cook it till about one string of syrup is formed. Add some cardamom powder to it and turn off the gas.

Prepare Gulab Jamun Dough

Heat some ghee in a pan and fry boiled and grated carrots in it for 2-3 minutes. Now add khoya/mawa to it, mix well and cook till it thickens. Turn off the gas and let this mixture cool slightly. When it cools down, add flour and remaining cardamom powder to it and prepare a soft dough. If it seems sticky, you can add a little more flour, but too much flour can make the jamuns hard.

Fry

Make small balls from the dough. Make sure that there are no cracks in the balls. Heat ghee or oil in a pan. Keep the flame low. Fry these balls in hot ghee/oil on low flame till they become golden brown. By frying on low flame the berries get cooked from inside. Take out the fried jamun and immediately put it in hot syrup.

serve

Dip the jamuns in the syrup for at least 15-20 minutes or 1 hour so that they absorb the syrup properly and swell. Carrot gulab jamuns are ready! Garnish them with pistachios or almonds and serve them hot or cold.
