Millet Malida Recipe
These days a lot of emphasis is being laid on eating millets. 30-40 years ago, eating coarse grains was considered a sign of poverty. Today, the same coarse grain has become the pride of place on the plates of those who are conscious about fitness and health. People tell with great fondness that we eat millet roti. Well, there are many benefits of market i.e. Pearl Millet in winter. Eating millet keeps the body warm. Millet is high in fiber due to which it is considered excellent for diabetic patients. People make millet roti, millet tikkis and millet flour parathas and eat them fondly. But today we are telling you how to make Malida from millet roti. The sour taste of millet roti resembles churma. Millet Malida Recipe
First step- To make millet flour, first knead soft flour of millet. The millet flour is kneaded by breaking it and mixing it again. Add some salt to it, which makes the rotis more soft. Now make rotis from millet flour and bake on low flame. If you are finding it difficult to make roti, then apply some dry wheat flour on the roti and roll it with a rolling pin. You can also make millet roti by applying polythene.
Second step- First bake the millet roti on the pan for some time. Now lower it on the gas and bake the rotis until they become crisp. To make Malida, you will have to prepare 4-5 rotis. Now when the rotis are slightly hot, mash them well with your hands and make a powder. This is how Malida is made in the village. But if you are not able to do this then you can put the rotis in a mixer and make them into fine powder.
Third step- Now add melted jaggery and ghee to the ground millet rotis. First cut the jaggery into small pieces. Now add 2-3 spoons of desi ghee in the pan or kadai. Add finely ground jaggery in it. When the jaggery becomes slightly soft, mix it with ghee in the ground millet rotis. Mix everything well.
Fourth step- Keep mixing the prepared mixture by rubbing it well with hands and then make it into laddus. Tasty Malida made from millet roti is ready. If you want, you can eat it like this without making laddus. Bajra Malida will taste exactly like a sweet dish. But in UP it is eaten with dal tempered with urad garlic and red chillies. You too must make millet paste and eat it once.
