Ingredients for Methi Matar Malai
Fenugreek 1 cup, green peas half cup boiled, onion 2 medium, cashew nuts 12, green chilli 2, ginger 1 inch piece, cream half cup, milk half cup, ghee 2 tablespoon, cumin half teaspoon, bay leaf, turmeric half teaspoon, coriander powder 1 teaspoon, garam masala half teaspoon, sugar half teaspoon, salt as per taste.
Easy way to make Methi Matar Malai

Prepare fenugreek: To make methi matar malai, first reduce the bitterness of fenugreek. Therefore, add water to fenugreek and add some salt to it, keep it for 10 minutes and then squeeze it. This reduces the bitterness of fenugreek.

Prepare the gravy base: Grind onion, cashew nuts, ginger and green chillies and make a paste. Cashews make the gravy thick and creamy. Before making cashew paste, soak it in hot water for 15 minutes. Also use white onion for white gravy.

Roasting process: Turn on the gas, keep the pan and heat ghee in it. After that add cumin seeds and when it starts crackling, add cashew paste to it and fry it well. Proper roasting brings out the flavor of the vegetable.

Add spices: When the paste is fried well, add turmeric, red chili powder, coriander powder and Maggi masala and cook on low flame. Spices should not remain raw.

Mix fenugreek and peas: Now cook fenugreek in the pan and then add boiled peas to it and cook it lightly. The peas add sweetness which balances the fenugreek. After that add cashew paste into it. Finally add milk and cream, salt and some sugar. This makes the vegetable rich and smooth. Serve Methi Matar Malai with Naan, Tandoori Roti or Paratha.
