Amla sweet and sour chutney

Amla Khatti Meethi Chutney Recipe
First step- To make sweet and sour amla chutney, first wash the amla. Now fill water in a deep pan, put Amla in a strainer and cover it. Amla has to be cooked till it melts slightly. Amla will melt in steam in 15-20 minutes.
Second step- Now let the Amla cool slightly and then take out its seeds. Now you have to take about 200 grams of dates and take out their seeds. Add about a cup of lukewarm water to the dates and let it sit for half an hour. Now wash and clean about 20-25 basil leaves.
Third step- Now peel and clean a 2-3 inch piece of ginger. Put soaked dates with water in a mixer and add basil leaves and ginger pieces to it. Mix everything and grind it. Now put Amla in a mixer jar and grind it.
Fourth step-Take a big pan and add 2-3 spoons of ghee in it. Add ground amla in it and fry it. Fry the Amla for 10-15 minutes while stirring continuously and then add the ground date paste on top. Keep frying everything while mixing it.
Fifth step-Now add about 200 grams of jaggery in it. If the jaggery is in thick pieces then break it lightly. Now take some garam masala and grind it. If you have ground garam masala then you can add that also. Garam masala will increase both the taste and benefits. Keep frying it while stirring and add black salt as per taste. Make a little space in the middle of the pan and check if the water has dried completely then turn off the gas.
Now when it cools down, fill it in a glass jar. Super tasty sweet and sour Amla chutney is ready. You must eat 1-1 spoon of it every morning and evening. Eating this chutney will strengthen immunity.
