Naan Recipe
prepare the dough
Mix all purpose flour, baking powder, baking soda, sugar and salt in a large bowl. Add curd and oil/ghee to it. Knead a soft and smooth dough with the help of lukewarm water (or milk).
ferment dough
Grease the dough with oil and keep it covered in a warm place for 1-2 hours so that it rises.
make balls
Make small balls of the dough.
naan rolls
Take a ball and gently roll it into the shape of your choice. Keep it a little thick.
add toppings
Put some green coriander and nigella seeds on the rolled naan and press it lightly.
apply water
Flip the naan and apply some water on its back side. This layer of water will help the naan stick to the pan.
bake naan
Heat an iron pan well on medium flame. Place the watery side on the hot pan. When bubbles start appearing on the upper surface of the naan and it gets lightly roasted, turn the pan upside down. Now, turn the pan upside down and roast the naan directly on the gas flame by rotating it all around. This will give tandoor like color and texture to the naan. Keep the flame medium so that the naan does not burn.
serve
When the naan is cooked well, carefully remove it from the pan. Immediately apply butter or ghee on it and serve hot.
